George Ito is a strawberry farmer from Oxnard, CA. who came up through the Karts and TQ's at Ventura.
The real Judge Ito was named Lance. Calling him "Judge" was a joke, started I think by Ventura promoter/announcer Jim Naylor because the OJ trial was getting a lot of press just down the 101 a few miles. George was a pretty good shoe and I think he took the nickname in good humor; it didn't hurt that it probably got him mentioned a few extra times a night by Gary & Larry on the Thunder telecasts...
