I have no knowledge of coil overs. Question: If I wanted to put coils on the front my sprint, assuming a 7" would work, but what should the coil spring rating be? Looking at purchasing a couple only for emergency backups in the event of damaging the tubes.

Calculate the spring rate of your front torsion bars (there are a few online), and a similar coil spring will give the car the relatively same effect. There are some other variables such as shock/spring angle and spring base and whatnot that might make a difference in how the car handles compared to the bars, but those springs should get you out of a jam.

I always ran a 250 left front and 350 right front and had success. Suspension Springs makes a great affordable spring! Good luck!
