too bad the purses in racing haven't kept up with inflation.

It’s not just racing purses that haven’t kept up with inflation. FOR THE MOST PART (I know there are some industries where this is not true) wages have not kept pace with inflation since about 2005.

The cost to do business keeps rising faster than inflation as well.
