I'd use a champ dirt car. Longer wheelbase and larger cockpit. I wouldn't mess with a clutch either, I'd run a powerglide.

If you do this with a sprinter, I'd run a hot V-6, with the missing cylinders , this also gives you more room. With the light weight, even with a V-6, done right it would be fast on the street.
