You should be fine going on a Sunday. The only times it gets really backed up is during standard work commute hours.
Even then, if you stay in the left hand lane and stay on 65 past the bridge the traffic tends to keep moving. The main congestion is with cars trying to merge onto I-64 at the end of the bridge.
