Question regarding right rear wheels

With the (not so) new 16 inch right rear tires, what is the best size right rear wheel to run these things on. Hoosier recommends 16-18 inches, and lists specs based on a 17 inch wheel. Obviously a 16 inch wheel will make the tire tape out bigger and an 18 will make it tape smaller, how would this affect side bite with a taller or shorter sidewall? Any opinions are appreciated. Thanks.

More sidewall equals more bite overall. Just have to take tire press into consideration a bit more carefully as too low pressure with a taller sidewall will cause the center of the tire to "cup"
